The panel is accurate. It is also easy to misread.
Most label mistakes are not misprints. They come from reading a real number against the wrong quantity, and the layout does very little to stop you.
Serving size is the whole game
Every number on the panel refers to one serving, and the serving is whatever the manufacturer declared. It is frequently not the amount anyone eats, and frequently not the container.
A bottle holding two-and-a-half servings lists calories per serving. A snack bag holding three does the same. Reading that figure as the whole package is comfortably the most common label error, and it understates by whatever the multiplier is. Check the servings-per-container line before anything else.
The numbers carry tolerances
Printed values are permitted to vary from the actual contents within tolerances the US Food and Drug Administration sets in 21 CFR 101.9(g), and they derive from analysis of a representative composite rather than the specific unit you are holding, the rule specifies twelve subsamples drawn from twelve randomly chosen shipping cases. The tolerance is not symmetrical: naturally occurring vitamins, minerals, protein, carbohydrate and fiber have to reach at least 80% of the declared figure, while calories, sugars, fat and sodium must not exceed theirs by more than 20%. A vitamin or mineral that was added to the food is held to a stricter rule and has to meet its declared figure in full.
This is not deception; it is unavoidable in food manufacturing. But it does mean the panel is accurate to within a range rather than exact, which is one of several reasons any total assembled from labels is an estimate. That is fine as long as you do not treat it as more precise than it is.
What percent daily value means
The %DV column expresses the amount in one serving against a reference intake. The footnote the FDA requires in 21 CFR 101.9(d)(9) says it plainly: “2,000 calories a day is used for general nutrition advice.” That is a labeling convention, not a recommendation for you.
If your own intake differs substantially, the percentages do not correspond to your day. It remains genuinely useful for comparing two products at a glance, and for spotting whether a food contributes a lot or a little of something. It is not a target.
Where things hide
Added sugars appear under many names in the ingredient list. Syrups, concentrates, anything ending in -ose. 21 CFR 101.4(a)(1) requires ingredients to be listed “in descending order of predominance by weight”, so several sugars listed separately can collectively outweigh an ingredient sitting above them.
Sodium is rarely where people expect it. The FDA puts more than 70% of it in packaged and prepared foods rather than the salt shaker, and names deli-meat sandwiches, pizza, soups, savory snacks and pasta dishes among the biggest contributors in Sodium in Your Diet. Bread is not on that list, but the FDA makes the point separately: a slice is not high in sodium, yet most people eat several across a day and it adds up.
Front-of-pack claims are marketing operating within legal definitions. Some are drawn tightly: 21 CFR 101.56 defines “light” as half the fat against a reference food, or a third fewer calories where that food gets less than half its calories from fat, and 21 CFR 101.65 puts food-group requirements and added-sugar, sodium and saturated-fat limits behind “healthy”. Others, “natural” among them, are far looser than a shopper assumes. The panel and the ingredient list are the parts that have to be accurate.
